Il Cotto di Orazio is a staple here at COMAL.
This premium flame-broiled prosciutto cotto is made with carefully selected whole pork leg, which is cooked out of the traditional molds in order to maintain its natural shape. After an initial steaming process, the ham is roasted and smoked over chips of beech-wood, which gives the meat its distinctively bold flavor.
It is both gluten-free and lactose-free.
