La Bacon - Doppia
Pancetta made with 100% Italian pork. For this pancetta, we united two layers of pork belly with the rind, then slowly steamed them. The whole was then lightly smoked with chips of beech-wood, for an irresistibly flavored pancetta that is both gluten-free and lactose-free.
