This premium prosciutto cotto is the pride and joy of all of us here at COMAL, in part because the ham we use is certified to meet animal welfare standards. We make it with carefully selected pork leg, to which we apply a special deboning technique that keeps all the muscle intact. The main features of this ham are the total absence of added sugars, the use of iodized salt, and low sodium content. Finally, the long steam cooking in cycles of more than 24 hours, and the slow processing generally, lend extreme softness and sweetness to every slice.
